Gardening, I was 16 and cut the grass of all the big houses in Bothwell

Alistair Littles in Soho back in 90’s, he had a star but was first to break the Michelin mold
- How do you inspire your team
Encouragement, sharing positive feedback reviews etc and leading by example.
- Which person in hospitality have you most admired / inspired you?
Alistair Little as a chef, Ken McCulloch as an operator
- How do you manage your stress levels?
Try and get some exercise between shifts, there is a pool in hotel across the street which is a great de-stressor

All of the above, mainly to share relevant information, updates, offers etc about the restaurant, mainly business
- If you had not gone into hospitality, where do you think you would be now?
Probably gone to art school and maybe teaching.
- What did you do on your last days off?
Watched some sport, did the garden, made roast dinner, went for a run
- What do you do to relax, to support your wellbeing?
I try to exercise daily whether that’s a swim or a jog, recently got a turntable so rediscovering all my old vinyl
