• What was your first job?

I worked in a café in Greece

• Which is your favouriterestaurant /hotel?

Gleneagles Hotel & The Strathearn Restaurant at Gleneagles – a lot of personal memories for me 😊

• How do you inspire your team

I lead by example and to always be there for them irrespective of the level they are, we have all been at their level once and they are the potential future leaders of our industry

• Which person in hospitality have you most admired / inspired you?

Alan Hill, who was the Exec Chef at Gleneagles several years ago.

• How do you manage your stress levels?

By ensuring I recharge the batteries when I have a day off, when the pressure is high, by talking to my wife so that I can bounce off ideas and decompress.

Instagram….. since a picture is worth a 1000 words, as they say.

• If you had not gone into hospitality, where do you
  think you would be now?

Initially I studied Applied Maths & Physics so a completely different aspect, alas I never enjoyed working behind a desk!

• What did you do on your last days off?

Spending time with the family.

• What do you do to relax, to support your wellbeing?

DIY projects, I always like to be busy and keep myself occupied.
