Now in his 23^rd year in hospitality, he started at the age of 15 at One Devonshire Gardens under Andrew Fairlie and later Gordon Ramsay, then moving to work with Brian Maule at Chardon D’or for 6 years. It was on to La Bonne Auberge within the Holiday Inn for 7 years. He currently works as assistant manager in the city’s newest restaurant, wine and cocktail bar, The Skillet, based on Hyndland Street in the west end.

Having experienced every high and low hospitality has to offer over the years he wouldn’t change it for the world. Having met some of his best friends through it all and very proud to call them his family and he thinks the industry is amazing for bringing everyone together for that reason.

He says, “I think its massively important that you look after yourself and personal wellbeing in all these current times and be there to help and assist anyone in need of advice or just an ear to listen to”.
