Herve Bernier

Resort General Manager - Dunkeld House Hotel

  • What was your favourite subject at school?

It would have to be math, I have always had a passion for numbers and problem solving. I even contemplated to be a math teacher for a while!!

  • What was your first job?

I started my working life as a pot washer for my dad at his butcher shop in my early teens. My mum and dad certainly set me up with great work values, which I have carried with me throughout my career.

  • Which is your favourite restaurant /hotel?

I would probably say the Royal Club Evian in France, where I worked for two summers. It is a fantastic five-star resort property overlooking the Leman lake, which is such a beautiful region. It recently held the G7.

  • How do you inspire your team

I see my role as the music conductor of a world-class orchestra. I am here to empower my team to drive the business, it is so rewarding to see your team developing and growing. I try and create a fun environment where we want to be the best we can.

  • Which person in hospitality have you most admired / inspired you?

It would have to be Dick Beach, General Manager at Dunkeld House Hotel, when I first started there in July 1990. He was a great leader, with such a strong passion for hospitality and he did a lot for my personal development. Sadly, he passed away last November but after a 20 year absence, I returned to Dunkeld House Hotel in March 2024 as Resort General Manager, I always want to make him proud.

  • How do you manage your stress levels?

It would have to involve some cycling. I used to run but the years have taken some toll on my knees – still, the team and I have signed up for a 10k run at end of August. Wish us luck!

  • Instagram, Twitter or Facebook – and why?

It is no longer called Twitter but X – that much I know. Anyway, I am not a big personal user, but I realise it is important to be involved to promote the business.

  • If you had not gone into hospitality, where do you
    think you would be now?

A math teacher was never going to be a real option, but I think I would have liked to be a joiner or a farmer (I have a passion for big tractors). My grandad’s were joiners and farmers, and I have great childhood memories in their company.

  • What did you do on your last days off?

It did involve some cycling, a nice Negroni for aperitif before a most enjoyable family dinner.

  • What do you do to relax, to support your wellbeing?

I now finish my days with a yoga, stretching session after my dinner. My 10 minutes of me-time helps me reset and not bring tension in my night sleep (Doesn’t always work 😊).
