- What was your favourite subject at school?
Modern studies, I studied the Watergate scandal and read about Gerald Ford the American president who I got to meet when I worked in Vail, Colorado as he hosted his ski – classic. I also got to cook for him when I was at Turnberry, before the British open in 1986. Spent 6 months in Vail what an experience!
- What was your first job?
Commis chef at the Central Hotel, Glasgow in July 1978 with British Transport Hotels.
- Which is your favourite restaurant /hotel?
My favourite restaurant is, Andrew Fairlie’s at Gleneagles , favourite hotel is in Kowloon Hong Kong Intercontinental it was top notch.
- How do you inspire your team ?
I like to motivate them by setting challenges and giving out prizes every few months if they are showing progression and go out for dinner with the team when we can.
- Which person in hospitality have you most admired / inspired you?
There have been many people in industry but Chef Cameron who I worked for at Turnberry, certainly helped play a big part in my career. In addition Mr Tony Jackson who I worked with for many years played a great role in helping me to get involved in many competitions and helped me develop my career , but also there were lots of talented chefs who took time to invest in me and show me some great techniques.
- How do you manage your stress levels?
I manage to take a deep breath, assess the situation then a cup of tea helps to clarify and deal with any issues to get a suitable outcome
- Instagram, Twitter or Facebook – and why?
Yes, I have access to these type of platforms and social networking but I don’t get worked up over it, and its good to contact the family when requested.
- If you had not gone into hospitality, where do you
think you would be now?
Possibly a tradesman working at the docks in Greenock as that’s what was available to us when we left school, but I didn’t fancy that as I wanted to be a chef.
- What did you do on your last days off?
I’m very fortunate that I have some beautiful grandchildren, also I met up with my closest friend and son to go to the football including the grand kids.
- What do you do to relax, to support your wellbeing?
I reflect on the situations and try to deal with it and chill out, do some cooking enjoy a cup tea and get time with the grandkids.
