Lorna McNee

Head Chef, Cail Bruich

It was great to chat recently with Lorna McNee, who has joined the team at Cail Bruich in Glasgow, from Restaurant Andrew Fairlie. Good luck in the new role!

  • What was your favourite subject at school?

My favourite subject was either Art, the photography part the most, or Maths.

  • What was your first job?

My very first Job was working as a KP in a small family run Italian restaurant.

  • Which is your favourite restaurant /hotel?

My favourite restaurant that I have eaten in was definitely Core by Clare Smyth. It has sentimental value and the food was incredible.

  • How do you inspire your team? 

I try and make sure that I’m always showing them how enthusiastic I am about produce and how amazing the Scottish larder is. I also always make sure and make them part of dish tasting and menu ideas to show them that they have an imagine too and you must always try and keep stimulating that.

  • Which person in hospitality have you most admired / inspired you?

Chef Andrew always. An inspiration to work for, To listen to, as a chef and as a personal figure. Always teaching a inspiring and I wouldn’t have spent my younger growing days with anyone else. His guidance means absolutely everything to me.

  • How do you manage your stress levels?

I like to go to CrossFit. It’s a great place to forget everything and push yourself to other limits of fitness and health. I absolutely live it.

  • Instagram, Twitter or Facebook – and why?

Instagram. I find it more inspiring with looking at people’s creations and makes me think more and see what latest trends are. It’s a great place to get your imagination going. But also get to see photos of where friends and family are and what they are doing.

  • If you had not gone into hospitality, where do you think you would be now?

To be honest I think I would be doing anything that gives me a buzz or releases some adrenaline. I would like to think something to do with fitness or a firefighter.

  • What did you do on your last days off?

I went for a really nice long socially distanced walk with my partner, our 2 dogs, and one of my best friends and her husband to tell them happy anniversary on their first year married!

  • What do you do to relax, to support your wellbeing?

I like to go for long walks, go to CrossFit or tell my partner anything that is bothering me. She’s great and making me see things in a better light. I sometimes stress the small things and overthink a lot. She brings me back down and reminds me that no matter what, always enjoy myself.
