- What was your favourite subject at school?
School wasn’t really my thing, but looking back, I wish I had just kept my head down and pushed through. Not having that foundation has definitely made my path a bit harder, but it’s also shaped my resilience and drive to succeed.
- What was your first job?
My first job was in hospitality working for my family who owned Brunswick Cellars on Sauchiehall Street in the early 90’s
- Which is your favourite restaurant /hotel?
Without hesitation, it has to be Gleneagles. I’ve stayed there many times and even proposed to my wife there, making it a place that will always hold a special meaning for me. On top of that, they have an outstanding golf course!
- How do you inspire your team
I inspire my team by communicating effectively keeping them informed and updated on our vision, progress, and challenges. I always celebrate wins and successes, lead with full transparency, stay positive, and bring passion to everything we do.
- Which person in hospitality have you most admired / inspired you?
There isn’t just one individual—I’ve always been inspired by the hospitality industry as a whole. Growing up in a family fully immersed in it, I saw firsthand the passion, dedication, and energy that everyone brings to their work. That has always stayed with me.
- How do you manage your stress levels?
I manage my stress levels by talking to my wife, Karen—she has a brilliant way of putting things into perspective and keeping me grounded.
- Instagram, Twitter or Facebook – and why?
TikTok! My kids introduced me to it, and I’ve lost countless hours watching videos. It’s incredible how much you can learn and the random problems you can solve just by scrolling. If you haven’t tried it yet, give it a go—you might just get hooked!
- If you had not gone into hospitality, where do you think you would be now?
An international superstar DJ—at least, that was the dream! I still hold onto the aspiration, but for now, my biggest gigs are my Kitchen Disco’s. The crowd (mostly my family & Friends) seem to enjoy it!·
- What did you do on your last days off?
I spent three days in Dublin celebrating my 50th birthday—great city, great craic, and maybe one too many pints of Guinness!·
- What do you do to relax, to support your wellbeing?
I recently joined a golf club—whether it’s helping me relax or just adding to my frustrations is still up for debate. Time will tell, but at least the 19th hole never disappoints
